Abstract
This dataset contains data collected within the industrial PhD project "Sviluppo di nutraceutici arricchiti in molecole bioattive a partire da scarti e sottoprodotti dell’industria alimentare mediante processi biotecnologici basati su ceppi di batteri e lieviti lattici" (Development of nutraceuticals enriched in bioactive molecules starting from waste and by-products of the food industry through biotechnological processes based on strains of lactic acid bacteria and yeasts). Lactic acid bacteria were isolated from organic tomato and tested for gamma aminobutyric acid (GABA) production. The strain Levilactobacillus brevis CRAI was characterised for GABA production in basal and optimized conditions. Some probiotic properties were also assessed: antimicrobial and anti-inflammatory activities, together with adhesion to intestinal epithelium.
