Abstract

The dataset contains the NMR data as .fid files and the FT-IR as Origin files, used to characterize derivatives of L-Dopa and L-Tyr that behave as low molecular weight gelators. The ability of these gelators to form gels in different green organic solvents was evaluated through a deep rheological characterization, which is also reported in the dataset as Origin files.
