Abstract
This dataset contains data from the evaluation of two identical still white wines kept at different conditions for 173 days. The reported data show the EEM spectra acquired at specific time steps: at bottle opening, after 1, 2, 3, 4, and 7 days, then every three or four days for one month, and then every week until the end of the study. The aim of this research was to evaluate the effect of time and different conditions on the fluorescent species present in wine, named the secondary shelf-life.
